Lemon Poppy-seed cake

What a great way to jump into summer with this quick and refreshing dessert. Here are the ingredients needed to create this cake:
  1. 1 1/4 cups all-purpose flour
  2. 1 teaspoon baking powder
  3. 1 teaspoon lemon zest
  4. 1/4 teaspoon salt
  5. 2 sticks (1 cup) unsalted butter room temp
  6. 3/4 cup granulated sugar
  7. 2 eggs
  8. 2 tablespoons poppy seeds
  9. 1 1/2 cups confectioners sugar or powdered sugar
  10. 3 tablespoons fresh lemon juice
Steps for preparation:
  1. Preheat oven to 375°F.
  2. Butter or spray nonstick spray in a round cake pan.
  3. Whisk flour, baking powder, lemon zest, and salt in a bowl.
  4. Beat together butter and granulated sugar in another bowl until pale and fluffy, it will take around 2 to 3 minutes. Beat in eggs until combined.
  5. Then add flour mixture and poppy seeds and mix until just combined.
  6. Transfer batter to cake pan
  7. Bake until a wooden pick inserted in cake comes out clean and top of the cake is golden brown, about 30 minutes. Cool cake in pan on a rack 5 minutes, then invert onto rack.
  8. Whisk together powdered sugar and lemon juice in a bowl until smooth. You have just created a glaze
  9. Pour glaze over warm cake, spreading it with a spatula or a knife. 
  10. Serve warm or at room temperature or however desired
